Antimicrobial Edible Cellulose-Based (CB) Films and Coatings for Enhancing Microbial Safety of White Cheese During Storage

In this research, the antioxidant and antibacterial characteristics of edible cellulose-based film (CBEF) coating incorporated with β-carotene, Hesperedin Propolis on quality white cheese at 4°C were investigated. Samples evaluated were: Control, CBE films 8 different contents containing natural or non-natural antimicrobial agents for 15 days 5 day intervals. The effects cellulosic prepared against Staphylococcus aureus Escherichia coli, which are important food pathogens, directly artificially contaminated samples under cold storage conditions. Fresh samples, one semi-hard traditional Turkish cheeses, used artificial contamination. activity tested substances was measured by paper disc method. DPPH free radical scavenging activities, total phenolic content, (FT-IR, DSC TGA) CBEFs All significantly reduced E. S. viable counts, as compared control during time. Specifically, it determined that hesperidin sprayed showed an effect E.coli growth carotene growth. Growth both bacterial species highly inhibited (>50%) in presence 20% propolis. It concluded propolis can be substituted preservatives cheese. With advanced packaging technology, safety ensured, shelf life product extended losses sector reduced.
